Have read many threads on locking vehicle & avoiding alarm activation. However many refer to T6 -- does anyone have experience of actual locking method or disabling movement sensors on the T7 Multivan?

On my Multivan it allows me to switch OFF the Internal and Movement Alarm on the Infotainment screen when I switch Off the Ignition.
 
You can also swipe down on the white tab in the center top of the screen and select it from there
 
According to the manual, double press (within 2 seconds) the key lock button and it temporarily turns off internal monitoring until you unlock / lock again. After getting many messages on a day out that our alarm was going off when we left the roof up / flapping, we realised our mistake and have tried / tested this method on our T7 ocean phev.

Dash just says internal monitoring on switch off & no mention anywhere of anti tow? Am I missing it somewhere?

No. Vehicle movement, Anti-Tow, is part of the Internal Monitoring.
